Sweet Talk with Erin Kate of Jazz Bird Bakery
Jazz Bird Bakery has become a sweet staple in the Galveston wedding scene, thanks to the creative eye and skilled hands of Erin Kate. Known for her exquisite custom cakes and confections, Erin brings heart, artistry, and a touch of whimsy to every wedding dessert she creates. Whether you’ve seen her work at a local market or tasted one of her cakes at a celebration, you know her desserts are anything but ordinary. In this exclusive interview, we chat with Erin about her inspiration, her connection to the island, and how she helps couples make their big day even sweeter.
How did Jazz Bird Bakery come to life, and what inspired the name?
I finished culinary school in 2015 in New York City and at the time I was trying to also be in jazz bands. So I love singing vocal Jazz tunes. I’ve always loved birds and I love the song “Blackbird” by the Beatles so I just chose Jazz Bird as the name. Also the Brits call ladies “birds” so I thought that was cute.
Can you tell us a little about your background in both fine art and pastry arts?
I was living in NYC and singing in a band at night but it wasn’t paying the bills so I decided that I wanted to love my day job as well as my band night job. I have a degree in fine art and I always loved watching food network shows about cake decorating and thought I could do the same. I found a program at the international culinary center (formerly the French Culinary Institute) in nyc that was strictly “cake techniques and design” so I went through the program, loving every minute of it.
How do your artistic skills influence your cake design process?
I’m really detail oriented so I’m good at focusing for long periods of time on something artistic and making sure I do it to the best of my ability. I try not to take on projects that won’t suit my abilities. But I do love to learn new methods and it only helps to continue doing your craft in order to better yourself.
How would you describe your signature cake style or design aesthetic?
Lately I’ve been loving my bird cage cake design. I really just want to make elegant wedding cakes that are show stoppers.
Do you have a favorite cake you've created for a wedding or event?
I love the bird cage cake
What's your most popular flavor combo - and what's your personal favorite?
My most popular is the lemon blueberry, which is a white cake with blueberries and a lemon curd and cream cheese icing layered on top. I’m a chocolate girl so my chocolate with chocolate ganache is my favorite but it really ties with my Italian cream cake.
What does the custom cake process look like for your clients? Do you offer tastings or consultations?
The best method to interact with my clients is email, keeps everything organized. And yes I do offer tasting boxes that you can order with three or four of my favor combinations from my menu and pick up from me.
What do you love most about baking and designing cakes for weddings on Galveston Island?
I have loved Galveston since I was a kid so I’m just so grateful to be able to service the community that I’ve always dreamed of being a part of.
How does the island inspire your work - whether it's color, ingredients, or overall vibe?
I get a lot more beach theme cakes here on the island than I would in any other location that I’ve lived in, I love that laid back beach vibe.
Couples can often find you at the Galveston's Farmers Market and other local events - how has being a part of the market community impacted your business?
It has helped me grow for sure. I love interacting with my regular customer at the markets. It also helps bring in potential wedding cake clients.
Any favorite small businesses or local makers you love working with or supporting on the island?
Everyday Soap company, who I do markets with is so great, her soaps are absolutely fabulous. Underwater Oven does custom cookies that are beautiful and amazing. I’m not a cookie person myself and I love passing clients along to someone who does beautiful work.
What's a helpful tip you'd share with couples ordering a wedding cake for the first time?
Ask a lot of questions but make sure you have your basic info ready like your wedding date, approx guest count, and what kind of design ideas you have in mind.
Are there any trends in wedding cakes or desserts that you're currently loving - or hoping to bring back?
I love the vintage design. I kinda wish fondant was more popular in this area, it may not taste as good but it looks so pretty when done well, and you can just peel it off when you eat your cake.
What's your go-to treat when you're not baking for others?
I love homemade ice cream, I use my homemade honey lavender syrup, that I use for my English Diplomat cake, and mix it in with some of my ice cream base. It’s so good.
Coffee or tea while you bake?
I had to switch to decaf, I get too shaky when doing detail work. I love coffee!
